Instructions
Twice-fry the Fries: First, fry in Duck Fat at 325°F (160°C) for 5-7 minutes. Remove and drain. Increase oil temperature to 375°F (190°C) and fry again for 2-3 minutes, until golden brown and crispy. Season with Sea Salt.
Cook Bacon until crispy. Drain on paper towels and crumble.
To make the Cheese Sauce, melt Butter in a saucepan over medium heat. Whisk in Flour and cook for 1 minute.
Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly.
Reduce heat to low and stir in Gruyère Cheese and Parmesan Cheese until melted and smooth. Stir in Truffle Oil.
Place Fries on a serving platter. Pour Cheese Sauce over Fries.
Sprinkle with crumbled Bacon and Parsley.
Top with dollops of Crème Fraîche and serve immediately.
