Instructions
  1. Preheat oven to 400°F (200°C). Toss Potato Fries with Olive Oil, Paprika, and Garlic Powder. Spread on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  2. Cook Bacon until crispy. Drain on paper towels and crumble.
  3. To make the Cheese Sauce, melt Butter in a saucepan over medium heat. Whisk in Flour and cook for 1 minute.
  4. Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and stir in Cheddar Cheese and Monterey Jack Cheese until melted and smooth.
  6. Place Fries on a serving platter. Pour Cheese Sauce over Fries.
  7. Sprinkle with crumbled Bacon and Chives.
  8. Top with dollops of Sour Cream and serve immediately.
