Instructions
Prepare House-Made Pickles: Combine White Wine Vinegar, Water, Sugar, Mustard Seeds, and Dill in a small saucepan. Bring to a simmer and cook for 5 minutes. Pour over sliced Kirby Cucumbers and let cool for at least 30 minutes.
Cook Macaroni according to package directions. Drain and set aside.
In a large skillet, brown Wagyu Ground Beef over medium-high heat. Drain off any excess grease.
Prepare the Cheese Sauce. In a medium saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes, creating a roux.
Gradually whisk in Heavy Cream and Dry Sherry until smooth. Bring to a simmer, stirring constantly. Add Nutmeg and White Pepper.
Reduce heat to low and stir in Gruyère Cheese and Parmesan Cheese until melted and smooth.
Add cooked Macaroni and browned Wagyu Beef to the Cheese Sauce. Stir to combine.
Top with Diced Heirloom Tomatoes, House-Made Pickles, drizzle with Dijon Mustard, and garnish with Chives before serving.
