Instructions
  1. Heat Vegetable Oil in a large pot or Dutch oven over medium heat.
  2. Add Onion and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more.
  4. Add Ground Beef and cook, breaking it up with a spoon, until browned.
  5. Drain off any excess grease.
  6. Stir in Kidney Beans, Pinto Beans, Diced Tomatoes, Tomato Sauce, Chili Powder, Cumin, Smoked Paprika, Salt, and Pepper.
  7. Bring to a simmer, then reduce heat and cook for at least 30 minutes, or up to 1 hour, stirring occasionally.
  8. Serve hot, topped with Shredded Cheddar Cheese, Sour Cream, and Chopped Green Onions.
