Instructions
  1. Prepare the Brown Butter Aioli: Melt the Butter in a small saucepan over medium heat. Continue cooking until the Butter turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
  2. In a medium bowl, whisk together the Mayonnaise, Lemon juice, Dijon mustard, and Cayenne pepper.
  3. Slowly whisk in the browned Butter until fully incorporated. Season with salt to taste.
  4. Gently toss the warm Lobster meat with the Brown Butter Aioli.
  5. Brush the inside of the Brioche rolls with melted Butter.
  6. Toast the buns lightly in a skillet or under a broiler until golden brown.
  7. Fill each bun with the Lobster mixture.
  8. Garnish with freshly chopped Chives and a pinch of Fleur de sel and serve immediately.
