1 pound Cavatappi Pasta
1/2 cup Butter
1/3 cup All-Purpose Flour
3 cups Whole Milk
1/4 cup Heavy Cream

A richer and more flavorful mac and cheese with a blend of sharp cheddar and nutty Gruyere.
Instructions
  1. Cook Pasta according to package directions. Drain and set aside.
  2. Preheat oven to 375°F (190°C).
  3. In a large saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes, creating a roux.
  4. Gradually whisk in Milk and Heavy Cream until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and simmer for 5-7 minutes, or until sauce has thickened. Stir in Dijon Mustard, Smoked Paprika, Salt, and Pepper.
  6. Remove from heat and stir in Cheddar Cheese and Gruyere Cheese until melted and smooth.
  7. Add cooked Pasta to the Cheese Sauce and stir to combine. Pour into a greased baking dish.
  8. In a small bowl, combine Panko Bread Crumbs and Melted Butter. Sprinkle over the mac and cheese.
  9. Bake for 15-20 minutes, or until golden brown and bubbly.
