8 ounces Cooked Lobster Meat-chopped
1/4 cup Celery-finely diced
2 tbsp Shallots-minced
2 tbsp Fresh Chives-chopped

Instructions
  1. Cook Pasta according to package directions until al dente. Drain and immediately shock in ice water to stop cooking. Drain well and set aside.
  2. In a small bowl, whisk together all Dressing ingredients until emulsified.
  3. In a large bowl, gently combine Pasta, Lobster, Celery, Shallots, and Chives.
  4. Pour Dressing over the salad and gently toss to coat. Be careful not to overmix.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Garnish with extra chives before serving.
