Instructions
- Prepare the brioche dough: Combine flour, sugar, and yeast in a mixer bowl. Add eggs and warm milk, mixing until combined. Add softened butter gradually, kneading until smooth and elastic (8-10 minutes). Let rise for 1-2 hours, or until doubled.
- Cook bacon until crispy. Drain on paper towels.
- Preheat oven to 375°F (190°C).
- Punch down dough and roll out to 1/4-inch thickness.
- Cut dough into 6 equal squares.
- Wrap each square around a slice of bacon.
- Place wrapped rolls in a greased baking dish.
- Prepare the glaze: In a small saucepan, combine maple syrup, bourbon, and butter. Heat over medium heat until melted and slightly reduced. Stir in vanilla bean paste.
- Pour Glaze evenly over the bacon-wrapped rolls.
- Bake for 20-25 minutes, or until golden brown and cooked through.
- Sprinkle with flaky sea salt before serving.
