Instructions
  1. Prepare the brioche dough: Combine flour, sugar, and yeast in a mixer bowl. Add eggs and warm milk, mixing until combined. Add softened butter gradually, kneading until smooth and elastic (8-10 minutes). Let rise for 1-2 hours, or until doubled.
  2. Cook bacon until crispy. Drain on paper towels.
  3. Preheat oven to 375°F (190°C).
  4. Punch down dough and roll out to 1/4-inch thickness.
  5. Cut dough into 6 equal squares.
  6. Wrap each square around a slice of bacon.
  7. Place wrapped rolls in a greased baking dish.
  8. Prepare the glaze: In a small saucepan, combine maple syrup, bourbon, and butter. Heat over medium heat until melted and slightly reduced. Stir in vanilla bean paste.
  9. Pour Glaze evenly over the bacon-wrapped rolls.
  10. Bake for 20-25 minutes, or until golden brown and cooked through.
  11. Sprinkle with flaky sea salt before serving.
