Instructions
- Preheat oven to 400°F (200°C).
- Cut the pumpkin in half and scoop out the seeds.
- In a small bowl, whisk together all Maple-Juniper Glaze ingredients.
- Brush the cut sides of the pumpkin with the Maple-Juniper Glaze.
- Place the pumpkin cut-side up on a baking sheet.
- Roast for 45-60 minutes, or until the pumpkin is tender and easily pierced with a fork. Baste with glaze halfway through roasting.
- Let cool slightly before serving.
