1 lb Ground beef and pork blend (80/20)
1/2 cup Panko breadcrumbs
1/4 cup Whole milk
1 Egg
2 tbsp Fresh parsley-chopped

A more flavorful and satisfying meatball sub casserole with fresh herbs and a richer sauce. Still approachable for weeknight cooking.
Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine all Meatballs ingredients. Mix gently until just combined. Do not overmix.
  3. Roll mixture into 1-inch meatballs and place on a baking sheet.
  4. Bake meatballs for 20-25 minutes, or until browned and cooked through.
  5. While meatballs are baking, prepare the Sauce. Heat Olive oil in a saucepan over medium heat. Add Garlic and cook until fragrant, about 30 seconds. Add Tomato paste and cook for 1 minute. Add Crushed tomatoes, Sugar, Oregano, and Red pepper flakes. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  6. Lightly toast the halved Ciabatta rolls.
  7. In a 9x13 inch baking dish, arrange the toasted rolls in a single layer.
  8. Pour the Sauce over the rolls.
  9. Top with the baked Meatballs.
  10. Sprinkle with mozzarella and Parmesan cheese.
  11. Bake for 15-20 minutes, or until cheese is melted and bubbly.
