Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. Prepare the Cookie Crust: Combine all Cookie Crust ingredients and press into the bottom of the prepared pan. Bake for 12 minutes, until lightly golden.
  3. Prepare the Brownie Layer: Melt chocolate chips and butter together. Stir in sugar and espresso powder. Let cool slightly, then beat in eggs one at a time, followed by vanilla. Mix in flour and salt.
  4. Prepare the Cheesecake Swirl: Beat cream cheese and sugar until smooth. Beat in egg, vanilla, and sour cream.
  5. Pour the Brownie Layer over the warm Cookie Crust. Dollop Cheesecake Swirl mixture over the brownie batter. Use a knife or toothpick to swirl the cheesecake into the brownie batter.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let cool completely before cutting into squares.
