Instructions
  1. Preheat oven to 350°F (175°C).
  2. Steam or blanch fresh Broccoli until tender-crisp. Set aside.
  3. In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes to create a roux.
  4. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Cook until thickened, about 5-7 minutes.
  5. Stir in Garlic Powder, Onion Powder, Black Pepper, and Nutmeg. Remove from heat.
  6. In a large bowl, combine Chicken, Broccoli, Onion, and cheese sauce. Mix well.
  7. Pour mixture into a greased 9x13 inch baking dish.
  8. Sprinkle Cheddar and Monterey Jack Cheese evenly over the top.
  9. In a separate bowl, combine crushed Ritz Crackers and melted Butter. Sprinkle evenly over the cheese.
  10. Bake for 30-35 minutes, or until bubbly and golden brown.
  11. Let stand for 10 minutes before serving.
