Instructions
  1. Cook Chicken: Season Chicken with Salt and Pepper. Grill, bake, or pan-fry until cooked through (internal temperature of 165°F / 74°C). Let cool and dice.
  2. Cook Pasta: Cook Rotini pasta according to package directions. Drain and rinse with cold water. Set aside.
  3. Cook Bacon: Cook Bacon until crispy. Crumble and set aside.
  4. Prepare Sauce: In a medium bowl, combine all Sauce ingredients. Mix well.
  5. Combine Ingredients: In a large bowl, combine cooked Pasta, diced Chicken, crumbled Bacon, diced Celery, diced Red onion, diced Pickles, Cheddar cheese, and Monterey Jack cheese.
  6. Add Sauce: Pour Sauce over the pasta mixture and stir gently to coat evenly.
  7. Chill: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
