Instructions
Cook Chicken: Rub Chicken thighs with Olive oil, Smoked paprika, Garlic powder, Salt, and Pepper. Grill, bake, or pan-fry until cooked through (internal temperature of 165°F / 74°C). Let cool and dice.
Cook Pasta: Cook Tri-color rotini pasta according to package directions. Drain and rinse with cold water. Set aside.
Cook Bacon: Cook Thick-cut bacon until crispy. Crumble and set aside.
Prepare Sauce: In a medium bowl, combine all Sauce ingredients. Mix well.
Combine Ingredients: In a large bowl, combine cooked Pasta, diced Chicken, crumbled Bacon, diced Celery, diced Red onion, diced Dill pickles, chopped Parsley, and chopped Dill. Add Cheddar and Pepper Jack cheese.
Add Sauce: Pour Sauce over the pasta mixture and stir gently to coat evenly.
Chill: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
