Instructions
  1. Cook Chicken: Rub Chicken thighs with Olive oil, Smoked paprika, Garlic powder, Salt, and Pepper. Grill, bake, or pan-fry until cooked through (internal temperature of 165°F / 74°C). Let cool and dice.
  2. Cook Pasta: Cook Tri-color rotini pasta according to package directions. Drain and rinse with cold water. Set aside.
  3. Cook Bacon: Cook Thick-cut bacon until crispy. Crumble and set aside.
  4. Prepare Sauce: In a medium bowl, combine all Sauce ingredients. Mix well.
  5. Combine Ingredients: In a large bowl, combine cooked Pasta, diced Chicken, crumbled Bacon, diced Celery, diced Red onion, diced Dill pickles, chopped Parsley, and chopped Dill. Add Cheddar and Pepper Jack cheese.
  6. Add Sauce: Pour Sauce over the pasta mixture and stir gently to coat evenly.
  7. Chill: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
