This luxurious quesadilla features slow-cooked, shredded short rib, a truffle-infused cream cheese sauce, and artisanal Oaxaca cheese for an unforgettable culinary experience.
Sear Short Rib in olive oil in a Dutch oven until browned on all sides. Add onion and garlic and cook until softened. Deglaze with red wine, scraping up browned bits. Add beef broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 3-4 hours, or until short ribs are fork-tender. Remove short ribs and shred the meat, discarding the bones and bay leaf.
Combine all Sauce ingredients in a bowl and mix well.
Spread a thin layer of Sauce onto one half of each tortilla. Sprinkle with shredded Oaxaca cheese from the Quesadilla group.
Top with shredded Short Rib. Fold the tortilla in half.
Cook quesadillas in a lightly oiled cast iron skillet over medium heat for 5-6 minutes per side, or until golden brown and cheese is melted.
