Season Chicken with smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Cook Chicken in a skillet over medium heat until cooked through, about 10-12 minutes. Shred the Chicken.
Combine all Sauce ingredients in a bowl and mix well.
Spread a thin layer of Sauce onto one half of each tortilla. Sprinkle with shredded Asadero cheese from the Quesadilla group.
Top with shredded Chicken. Fold the tortilla in half.
Cook quesadillas in a lightly oiled skillet over medium heat for 4-5 minutes per side, or until golden brown and cheese is melted.
