Instructions
  1. Brine chicken in Water, Salt, Rosemary, and Garlic for at least 4 hours, or overnight.
  2. Remove chicken from brine, pat dry, and cut into 1-inch cubes.
  3. Combine Coating ingredients in a bowl.
  4. Dredge chicken in the flour mixture.
  5. Prepare Liege waffles according to package directions.
  6. Reduce Maple syrup and Bourbon in a saucepan over medium heat for 10-15 minutes, until slightly thickened. Whisk in Butter at the end.
  7. Fry chicken in hot oil (350°F/175°C) for 6-8 minutes, until golden brown and cooked through.
  8. Cut waffles into 1-inch squares.
  9. Thread chicken and waffle pieces onto skewers, alternating between the two.
  10. Brush skewers with Bourbon-Maple Reduction and serve immediately.
