Instructions
  1. Preheat oven to 400°F (200°C). Toss tater tots with Duck Fat and Fleur de Sel. Roast on a baking sheet for 15-20 minutes, until golden brown and crispy.
  2. Grease a 12-cup muffin tin.
  3. Place approximately 10-12 roasted tater tots into each muffin cup.
  4. In a bowl, whisk together the Eggs, Crème Fraîche, Smoked Paprika, and Black Pepper.
  5. Pour the egg mixture evenly over the tater tots in each muffin cup.
  6. Sprinkle the grated Manchego Cheese over the top of each bite.
  7. Bake for 15-20 minutes, or until the eggs are set and the cheese is bubbly and golden.
  8. Garnish with Fresh Parsley before serving.
