Instructions
  1. Cook wild rice according to package directions using chicken broth. Drain and set aside.
  2. Season chicken with salt and pepper. Cut into bite-sized pieces and brown in a large skillet over medium-high heat. Remove chicken from skillet and set aside.
  3. In the same skillet, melt butter. Whisk in flour and cook for 1-2 minutes to create a roux.
  4. Gradually whisk in milk and sherry until smooth. Bring to a simmer, stirring constantly, until sauce thickens. Season with salt and pepper.
  5. Add onion and mushrooms to the sauce and cook until softened, about 5-7 minutes. Stir in parsley and thyme.
  6. Stir in cooked wild rice, chicken, and peas. Mix well.
  7. Pour mixture into a 9x13 inch baking dish.
  8. Sprinkle with crumbled French onion potato chips.
  9. Bake at 350°F (175°C) for 20-25 minutes, or until bubbly and golden brown.
