In the same skillet, melt butter. Whisk in flour and cook for 1-2 minutes to create a roux.
Gradually whisk in milk and sherry until smooth. Bring to a simmer, stirring constantly, until sauce thickens. Season with salt and pepper.
Add onion and mushrooms to the sauce and cook until softened, about 5-7 minutes. Stir in parsley and thyme.
Stir in cooked wild rice, chicken, and peas. Mix well.
Pour mixture into a 9x13 inch baking dish.
Sprinkle with crumbled French onion potato chips.
Bake at 350°F (175°C) for 20-25 minutes, or until bubbly and golden brown.
