Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling: In a large bowl, crush the Ritz crackers into coarse crumbs. Add the sugar, cinnamon, and nutmeg. Mix well.
Combine the wet ingredients: In a separate bowl, whisk together the water and lemon juice. Pour over the cracker mixture and stir to combine. Let sit for 10 minutes to soften the crackers.
Assemble the Pie: Preheat oven to 375°F (190°C). Roll out the chilled crust and place it in a 9-inch pie plate. Pour the cracker filling into the crust. Drizzle the melted butter over the filling.
Bake: Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly. Let cool completely before serving.
