Monte Cristo Wafflewich
A refined Monte Cristo featuring Prosciutto di Parma, roasted turkey breast, aged Comté cheese, and a brioche waffle infused with orange zest. Served with a house-made cherry compote and a dusting of cocoa powder.
Prepare the Waffles: Incorporate Orange Zest into the Brioche Waffle batter before cooking.
Prepare the Egg Batter: In a shallow dish, whisk together the Eggs, Heavy Cream, Dry Sherry, and White Pepper.
Assemble the Wafflewich: Place one Brioche Waffle on a clean surface. Layer with Prosciutto di Parma, Roasted Turkey Breast, and Aged Comté Cheese. Top with the second Waffle.
Dip in Egg Batter: Gently dip the entire Wafflewich into the Egg Batter, ensuring both sides are coated.
Fry the Wafflewich: Heat Duck Fat in a large skillet over medium-low heat. Carefully place the dipped Wafflewich into the skillet and cook for 4-5 minutes per side, or until golden brown and the cheese is melted.
