Instructions
  1. Place Chicken in a large pot or slow cooker.
  2. In a bowl, whisk together all Sauce ingredients.
  3. Pour Sauce over Chicken, ensuring it's well coated.
  4. If using a pot, bring to a simmer, then reduce heat and cook for 30-40 minutes, or until chicken is tender and easily shredded. If using a slow cooker, cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred Chicken using two forks.
  6. In a small bowl, combine Coleslaw mix, Mayonnaise, and Lemon juice.
  7. Assemble sandwiches: Spread coleslaw on the bottom bun, top with shredded Chicken, and finish with the top bun.
