In a large saucepan, melt Butter over medium heat.
Add Apples and cook for 5 minutes, stirring occasionally, until slightly softened.
Combine Brown Sugar, Granulated Sugar, Apple Cider, Cinnamon, Nutmeg, Allspice, and Lemon Juice in a bowl. Pour over Apples.
Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until Apples are tender, stirring occasionally.
Stir in Vanilla Extract before serving. Serve warm.
