Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine all Filling ingredients. Toss to coat evenly.
  3. Pour the filling into a 9x13 inch baking dish.
  4. For the Quince Reduction: Combine Quince Juice and Maple Syrup in a small saucepan. Bring to a simmer and reduce until thickened, about 15-20 minutes. Set aside.
  5. For the Streusel Topping: In a separate bowl, combine the Flours, Brown Sugar, and Salt. Cut in the cold Butter until the mixture resembles coarse crumbs. Stir in the Pecans.
  6. Sprinkle the Streusel Topping evenly over the fruit filling.
  7. Bake for 50-60 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Drizzle the Quince Reduction over the cobbler before serving.
