Instructions
  1. Prepare the Crust: In a large bowl, whisk together the All-Purpose Flour, Chestnut Flour, and Salt from the Crust ingredient group. Cut in the Cold Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add Ice Water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: Heat Olive Oil in a large pot or Dutch oven over medium heat. Add Onion and cook until softened, about 5 minutes. Add Garlic and cook for 1 minute more.
  3. Add Carrots, Potatoes, and Parsnips from the Filling ingredient group and cook for 8-10 minutes, until slightly softened. Stir in Flour and cook for 1 minute.
  4. Gradually whisk in Vegetable Broth until smooth. Bring to a simmer, then reduce heat and cook for 15-20 minutes, or until the vegetables are tender. Stir in Heavy Cream, Frozen Peas, Thyme, Salt, and Pepper. Taste and adjust seasonings as needed.
