Instructions
  1. Prepare the Preferment: Combine Bread Flour, Water, and Instant Dry Yeast in a small bowl. Mix until a shaggy dough forms. Cover and let rest at room temperature for 12-18 hours.
  2. Prepare the Dough: In a large bowl, combine Bread Flour, Whole Milk, Honey, Salt, Olive Oil, and the prepared Preferment. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, turning to coat. Cover and let rise in a cool place (refrigerator) for 24-48 hours for optimal flavor development.
  5. Preheat oven to 425°F (220°C).
  6. Remove dough from refrigerator and let sit at room temperature for 30 minutes.
  7. Punch down the dough and divide it into 12 equal pieces.
  8. Roll each piece into a 6-8 inch long rope.
  9. Place the breadsticks on a baking sheet lined with parchment paper.
  10. Bake for 15-18 minutes, or until golden brown.
  11. Prepare the Browned Butter Topping: Melt the Butter in a saucepan over medium heat. Continue cooking, swirling occasionally, until the butter turns golden brown and has a nutty aroma (about 5-7 minutes). Be careful not to burn it.
  12. Remove from heat and stir in the minced Garlic, chopped Parsley, chopped Rosemary, and Sea Salt.
