Instructions
Preheat oven to 325°F (160°C). Grease and line a 9x13 inch baking dish with parchment paper.
Prepare the Flourless Brownie Layer: Melt chocolate and butter together. Whisk in sugar, then eggs one at a time. Stir in vanilla. Pour into the prepared baking dish and bake for 20-25 minutes, or until set but still slightly fudgy.
Let the brownie layer cool completely.
Prepare the Mascarpone Cheesecake Filling: Beat together mascarpone and cream cheese until smooth. Add powdered sugar and vanilla, then amaretto. Beat until light and fluffy. Spread evenly over the cooled brownie layer.
Prepare the Dark Chocolate Mousse Layer: Melt chocolate and heavy cream together. Whisk egg yolks and sugar until pale and thick. Temper the egg yolk mixture with the melted chocolate, then whisk until smooth. Pour over the cheesecake layer.
Refrigerate for at least 6 hours, or preferably overnight, to allow the layers to set.
Garnish with cocoa nibs, raspberry coulis, and edible gold leaf (if using) before serving.
