Instructions
- Cook fettuccine according to package directions. Reserve 1 cup of pasta water before draining.
- While pasta is cooking, melt butter in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add heavy cream to the skillet and bring to a simmer. Reduce heat to low and simmer for 5 minutes, or until slightly thickened.
- Stir in Parmesan cheese and nutmeg until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste. Add pasta water for a looser sauce.
- Add the mixed seafood to the skillet and cook until heated through, about 3-5 minutes, depending on the seafood used.
- Add the cooked fettuccine to the skillet and toss to coat with the sauce. Serve immediately.
