  1. Cook fettuccine according to package directions. Reserve 1 cup of pasta water before draining.
  2. While pasta is cooking, melt butter in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add heavy cream to the skillet and bring to a simmer. Reduce heat to low and simmer for 5 minutes, or until slightly thickened.
  4. Stir in Parmesan cheese and nutmeg until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste. Add pasta water for a looser sauce.
  5. Add the mixed seafood to the skillet and cook until heated through, about 3-5 minutes, depending on the seafood used.
  6. Add the cooked fettuccine to the skillet and toss to coat with the sauce. Serve immediately.
