Instructions
Preheat oven to 375°F (190°C).
Prepare the Sauce: Heat Olive oil in a saucepan over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced Garlic and cook for 1 minute more.
Stir in Crushed tomatoes, Dried oregano, Dried basil, Red pepper flakes, Salt, and Black pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
Prepare the Filling: Brown Italian sausage in a skillet, breaking it up with a spoon. Drain off any excess grease. In a medium bowl, combine Ricotta cheese, Egg, Grated Parmesan cheese, Chopped fresh parsley, browned Italian sausage, Salt, and Black pepper. Mix well.
Prepare the Bechamel: In a saucepan, melt Butter over medium heat. Whisk in All-purpose flour and cook for 1-2 minutes, creating a roux. Gradually whisk in Milk, stirring constantly to prevent lumps. Bring to a simmer and cook until thickened, about 5-7 minutes. Stir in Nutmeg and Salt.
Stuff the Manicotti: Carefully fill each Manicotti shell with the Filling mixture.
Assemble and Bake: Spread a thin layer of Sauce in the bottom of a baking dish. Arrange the stuffed Manicotti shells in the dish. Pour the remaining Sauce over the Manicotti. Pour Bechamel sauce over the top.
Sprinkle with shredded mozzarella cheese and grated Parmesan cheese. Bake for 25-30 minutes, or until bubbly and golden brown.
