  1. In a bowl, combine all Marinade ingredients: extra virgin olive oil, fresh lemon juice, thinly sliced garlic, lemon zest, chopped fresh rosemary, chopped fresh thyme, red pepper flakes, salt, and pepper.
  2. Add the olives to the marinade and toss to coat evenly.
  3. Let the olives marinate for at least 20 minutes at room temperature, or up to 2 days in the refrigerator, for the flavors to meld. Stir occasionally.
  4. Before serving, bring the olives to room temperature.
