Instructions
- In a bowl, combine all Marinade ingredients: extra virgin olive oil, fresh lemon juice, thinly sliced garlic, lemon zest, chopped fresh rosemary, chopped fresh thyme, red pepper flakes, salt, and pepper.
- Add the olives to the marinade and toss to coat evenly.
- Let the olives marinate for at least 20 minutes at room temperature, or up to 2 days in the refrigerator, for the flavors to meld. Stir occasionally.
- Before serving, bring the olives to room temperature.
