What You'll Need

Instructions
  1. At least 4 hours, and up to 24 hours, before cooking, dry brine the ribs: Combine Kosher salt and brown sugar. Rub evenly over the ribs and refrigerate, uncovered.
  2. Preheat oven to 275°F (135°C).
  3. In a small bowl, combine all Ribs ingredients (excluding salt and sugar) and rub evenly over the ribs.
  4. Place ribs on a wire rack set inside a baking sheet. Add 1/2 cup of water to the bottom of the baking sheet.
  5. Bake for 4-5 hours, or until ribs are extremely tender.
  6. While ribs are baking, prepare the Sauce. In a medium saucepan, combine all Sauce ingredients. Bring to a simmer over medium heat and cook for 20 minutes, stirring occasionally, until slightly thickened.
  7. Increase oven temperature to 350°F (175°C).
  8. Brush ribs generously with the Sauce.
  9. Return ribs to the oven, uncovered, and bake for another 15-20 minutes, or until sauce is caramelized and sticky. Broil for the last 2-3 minutes for extra caramelization, watching carefully to prevent burning.
