Arrange Scrapple slices in a single layer on the prepared baking sheet.
Season Scrapple with Black Pepper and Sea Salt.
In a small saucepan, combine all Glaze ingredients. Bring to a simmer over medium heat and cook for 10-15 minutes, or until reduced and slightly thickened. Remove from heat.
Brush the Glaze evenly over the Scrapple slices.
In a separate small skillet, heat Olive Oil over medium heat. Add Sage Leaves and cook for 1-2 minutes, or until crispy. Remove with a slotted spoon and drain on paper towels.
Bake for 20-25 minutes, flipping halfway through, until golden brown and caramelized.
Garnish with Crispy Sage before serving.
