Instructions
  1. Prepare the Dough: Combine warm water, yeast, and a pinch of sugar. Let stand for 5 minutes. Add flour, salt, and olive oil. Knead for 8-10 minutes until smooth and elastic. Let rise for 1 hour.
  2. Roast the Garlic: Wrap a head of garlic in foil with a drizzle of olive oil. Roast at 400°F (200°C) for 45-60 minutes, or until soft and caramelized.
  3. Prepare the Roasted Garlic Aioli: Squeeze the roasted garlic cloves into a bowl. Mash and combine with mayonnaise, lemon juice, olive oil, and black pepper.
  4. Shape the Knots: Divide the dough into 1-inch strips. Tie each strip into a knot.
  5. Bake the Knots: Place knots on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 15-20 minutes, or until golden brown.
  6. Finish and Serve: Brush the warm knots generously with Roasted Garlic Aioli. Sprinkle with Parmigiano-Reggiano Cheese and fresh chives. Serve immediately.
