Instructions
  1. Preheat oven to 375°F (190°C).
  2. Cook Rotini Pasta according to package directions. Drain and toss with Olive Oil, Chili Powder, Smoked Paprika, and Garlic Powder. Spread on a baking sheet and bake for 15-20 minutes, or until crispy, creating Pasta Chips.
  3. While Pasta Chips are baking, brown Ground Beef in a skillet over medium heat. Drain off any excess grease. Stir in Taco Seasoning. Simmer for 5 minutes.
  4. Make Queso Sauce: In a saucepan, combine Velveeta Cheese, Milk, and Diced Green Chiles. Heat over low heat, stirring constantly, until melted and smooth.
  5. Make Pico de Gallo: In a bowl, combine Diced Tomatoes, Diced Onion, Chopped Cilantro, and Lime Juice. Mix well.
  6. Assemble the salad: Spread Pasta Chips on a large platter. Top with seasoned Ground Beef, Queso Sauce, Pico de Gallo, Sliced Black Olives, Sour Cream, Guacamole, and Sliced Jalapeños.
  7. Serve immediately.
