Make Berry Compote: Combine Mixed Berries, Honey, and Lemon Juice in a small saucepan. Cook over medium heat for 5-7 minutes, or until berries have softened and released their juices. Let cool.
Spread a thin, even layer of cooked Rice onto a Nori Sheet, leaving about 1 inch of space at the top edge.
Spread Peanut Butter evenly over the Rice, leaving a small strip uncovered at the top.
Spoon Berry Compote over the Peanut Butter.
Using a sushi rolling mat (or carefully by hand), tightly roll the Nori Sheet away from you.
Moisten the uncovered edge of the Nori Sheet with water to seal the roll.
Slice the roll into 6-8 pieces with a sharp, wet knife.
Sprinkle with Sesame Seeds before serving.
