Instructions
- Prepare the Bourbon Caramel Sauce: In a saucepan, combine the Granulated sugar and Water. Cook over medium heat, without stirring, until the sugar dissolves and turns a deep amber color. Carefully whisk in the Heavy cream and Butter. Bring to a simmer and cook for 1-2 minutes, until smooth. Remove from heat and stir in the Bourbon and Salt.
- Prepare the Almond Frangipane Waffles: In a large bowl, whisk together the Almond flour, All-purpose flour, Granulated sugar, Baking powder, and Salt. In a separate bowl, whisk together the Milk, Eggs, Melted butter, and Almond extract. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Cook the waffles according to your waffle maker's instructions.
- Prepare the Caramelized Peaches: Melt the Butter in a skillet over medium heat. Add the sliced peaches and Brown sugar and cook for 5-7 minutes, or until the peaches are softened and caramelized.
- Assemble the Sundaes: Place a waffle on each plate. Top with a scoop of Vanilla bean ice cream, a generous spoonful of the Caramelized Peaches, and drizzle with the Bourbon Caramel Sauce. Garnish with Whipped cream and Toasted sliced almonds and serve immediately.
