Instructions
  1. Prepare the Bourbon Caramel Sauce: In a saucepan, combine the Granulated sugar and Water. Cook over medium heat, without stirring, until the sugar dissolves and turns a deep amber color. Carefully whisk in the Heavy cream and Butter. Bring to a simmer and cook for 1-2 minutes, until smooth. Remove from heat and stir in the Bourbon and Salt.
  2. Prepare the Almond Frangipane Waffles: In a large bowl, whisk together the Almond flour, All-purpose flour, Granulated sugar, Baking powder, and Salt. In a separate bowl, whisk together the Milk, Eggs, Melted butter, and Almond extract. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  3. Cook the waffles according to your waffle maker's instructions.
  4. Prepare the Caramelized Peaches: Melt the Butter in a skillet over medium heat. Add the sliced peaches and Brown sugar and cook for 5-7 minutes, or until the peaches are softened and caramelized.
  5. Assemble the Sundaes: Place a waffle on each plate. Top with a scoop of Vanilla bean ice cream, a generous spoonful of the Caramelized Peaches, and drizzle with the Bourbon Caramel Sauce. Garnish with Whipped cream and Toasted sliced almonds and serve immediately.
