Instructions
  1. Preheat oven to 400°F (200°C). Toss Sweet Potatoes from the Base group with 1 tbsp Coconut Oil and roast for 20-25 minutes, or until tender.
  2. While sweet potatoes roast, heat remaining 2 tbsp Coconut Oil in a large pot over medium heat.
  3. Add Onion and Garlic from the Base group and cook until softened, about 5 minutes.
  4. Stir in Red Curry Paste, Ground Cumin, and Ground Coriander from the Peanut Flavor group and cook for 1 minute more.
  5. Add Vegetable Broth and roasted Sweet Potatoes from the Base group. Bring to a simmer.
  6. Stir in Coconut Milk and Artisan Peanut Butter from the Peanut Flavor group. Blend with an immersion blender until smooth.
  7. Season with Sea Salt and Freshly Ground Black Pepper from the Seasoning group. Stir in Lime Juice.
  8. Simmer for 10 minutes, stirring occasionally.
  9. Serve hot, garnished with Toasted Peanuts, Fresh Cilantro, and Toasted Coconut Flakes from the Garnish group.
