Instructions
  1. Preheat oven to 375°F (190°C). Toss the diced Apples with 1 tbsp Maple Syrup and 1/4 tsp Cinnamon. Roast for 15-20 minutes, or until tender and slightly caramelized.
  2. Rinse the Barley thoroughly under cold water.
  3. Combine the Barley, Milk, and Heavy Cream in a medium saucepan.
  4. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the barley is tender and the liquid is absorbed, stirring occasionally.
  5. While the barley cooks, melt the Butter in a separate saucepan over medium heat. Continue cooking, swirling occasionally, until the butter turns golden brown and has a nutty aroma (about 5-7 minutes). Remove from heat.
  6. Stir the Brown Butter, remaining 1 tbsp Maple Syrup, Vanilla Extract, and Salt into the cooked barley. Continue to cook for another 2-3 minutes, stirring constantly.
  7. Remove from heat and stir in the Roasted Apples and toasted Pecans.
  8. Serve warm, drizzled with a little extra Maple Syrup if desired.
