Beef burgers stuffed with Pepper Jack cheese and topped with a smoky chipotle mayonnaise for an extra kick.
Instructions
  1. In a large bowl, combine all Burger Patties ingredients and mix gently until just combined. Do not overmix.
  2. Divide the beef mixture into 4 equal portions.
  3. Flatten each portion into a patty about 1/2 inch thick.
  4. Place 2 slices of Pepper Jack Cheese from the Filling group in the center of each patty.
  5. Carefully fold the beef over the cheese, sealing the edges to create a stuffed burger. Ensure the cheese is fully enclosed.
  6. Preheat grill or skillet to medium-high heat.
  7. Cook burgers for 5-7 minutes per side, or until cooked through and the cheese is melted.
  8. While burgers are cooking, prepare the Chipotle Mayo. Combine all Chipotle Mayo ingredients in a small bowl and mix well.
  9. Serve on brioche buns with arugula, tomato slices, and a generous spread of Chipotle Mayo.
