Instructions
- In a small bowl, combine all Sauce ingredients. Whisk until smooth and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through (about 5-7 minutes).
- Add red bell pepper, broccoli, and carrot to the skillet and stir-fry for 3-5 minutes, until slightly tender.
- Pour the sauce over the chicken and vegetables. Stir to coat everything evenly.
- Bring the sauce to a simmer and cook for 1-2 minutes, until slightly thickened.
- Garnish with green onions and serve over rice or noodles.
