Instructions
  1. Season Prime rib with garlic powder, onion powder, black pepper, and cayenne pepper.
  2. Heat Olive oil in a large skillet or on a griddle over medium-high heat.
  3. Add Onions and cook until softened and slightly caramelized, about 8-10 minutes.
  4. Add Green bell pepper and cook until tender-crisp, about 3 minutes.
  5. Push the vegetables to one side of the skillet. Add Prime rib to the other side and cook, breaking it up with a spatula, until browned, about 3-5 minutes.
  6. Combine the Prime rib and Vegetables.
  7. Prepare the Beer Cheese Sauce: Melt Butter in a saucepan over medium heat. Whisk in Flour and cook for 1 minute. Gradually whisk in Beer, bringing to a simmer. Cook until thickened, about 5 minutes. Reduce heat to low and stir in Cheddar and Monterey Jack cheese until melted and smooth. Stir in Worcestershire sauce.
  8. Divide the Prime rib and vegetable mixture into four portions.
  9. Top each portion with Beer Cheese Sauce.
  10. Serve immediately in toasted Artisan hoagie rolls.
