Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Add the chicken pieces to the skillet and cook until browned on all sides.
- Pour in diced tomatoes, chicken broth, oregano, basil, red pepper flakes (if using), salt, and pepper.
- Bring the Sauce to a simmer, then reduce heat and cover. Cook for 20 minutes, or until chicken is cooked through.
- Serve hot, garnished with fresh parsley.
