1 cup Fermented pickle brine (see instructions)
1 cup Water
1/4 cup Kosher salt
1/4 cup Dill pickle juice

A sophisticated take on the classic, featuring heritage chicken brined in a house-made fermented pickle brine, Oaxaca cheese, and a smoky chipotle crema.
Instructions
  1. Prepare the Fermented Pickle Brine: Combine all Fermented Pickle Brine ingredients in a jar and let ferment at room temperature for 3-5 days, or until bubbly. Strain before using.
  2. Brine the Chicken in the Fermented Pickle Brine for at least 4 hours, or overnight.
  3. Combine all Breading ingredients in a shallow dish.
  4. Dredge the brined Chicken in the Breading mixture, ensuring it's fully coated.
  5. Heat Grapeseed Oil in a large skillet over medium-high heat.
  6. Fry the Chicken for 6-8 minutes per side, or until golden brown and cooked through.
  7. Prepare the Chipotle Crema by combining all Chipotle Crema ingredients in a small bowl.
  8. Spread a generous amount of Chipotle Crema on two of the Tortillas.
  9. Top with shredded Oaxaca Cheese, fried Chicken, and sliced Pickles.
  10. Place the remaining Tortillas on top and cook in the same skillet over medium heat for 2-3 minutes per side, or until golden brown and the Cheese is melted.
