4 Boneless skinless chicken thighs
1 cup Pickle juice
1/2 cup Buttermilk
1 tsp Salt
1/2 tsp Black pepper

Instructions
  1. In a bowl, combine all Chicken ingredients and marinate for at least 4 hours, or up to overnight.
  2. Combine all Breading ingredients in a separate bowl.
  3. Heat peanut oil in a large skillet to 350°F (175°C).
  4. Dredge each chicken thigh in the Breading mixture, ensuring it is fully coated.
  5. Fry chicken for 7-9 minutes per side, or until golden brown and cooked through.
  6. While chicken is frying, combine all Sauce ingredients in a small bowl.
  7. Toast brioche buns.
  8. Spread Sauce on both halves of each bun. Place fried chicken on the bottom bun, top with lettuce and pickle chips, and cover with the top bun. Serve immediately.
