Pimento Cheese Spread

Instructions
- **Pimento Cheese:** In a medium bowl, combine all Cheese ingredients.
- Add all Vegetables ingredients to the bowl.
- In a separate small bowl, whisk together all Binding ingredients.
- Pour the Binding mixture over the cheese and vegetables.
- Add all Seasoning ingredients and mix well until everything is thoroughly combined.
- Cover and refrigerate for at least 2 hours to allow flavors to meld.
- **Benne Seed Crackers:** In a food processor, pulse together flour, butter, and benne seeds until the mixture resembles coarse crumbs.
- Gradually add ice water, pulsing until the dough just comes together.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C). Roll out the dough thinly on a lightly floured surface.
- Cut into desired shapes and place on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until golden brown. Let cool completely.
- Serve the pimento cheese spread with the benne seed crackers.
