4 ounces Extra Sharp Cheddar Cheese-shredded
2 ounces Gruyere Cheese-shredded
4 ounces Pimentos-drained and diced
1/4 cup Green Onion-thinly sliced

Instructions
  1. In a medium bowl, combine all Cheese ingredients.
  2. Add all Vegetables ingredients to the bowl.
  3. In a separate small bowl, whisk together all Binding ingredients.
  4. Pour the Binding mixture over the cheese and vegetables.
  5. Add all Seasoning ingredients and mix well until everything is thoroughly combined.
  6. Cover and refrigerate for at least 1 hour to allow flavors to meld. Serve with crackers, vegetables, or on sandwiches.
