Cook the Bacon in a large pot or Dutch oven over medium heat until crispy. Remove bacon and set aside, leaving the rendered fat in the pot.
Brown the Pork in the bacon fat over medium-high heat. Drain off any excess grease.
Add the Aromatics to the pot and cook until softened, about 5 minutes.
Combine all Sauce ingredients in a bowl and pour over the pork and onions.
Add the Beans and cooked Bacon to the pot and stir to combine.
Bring to a simmer, then transfer to a slow cooker. Cook on low for 6-8 hours, or on high for 3-4 hours. Stir occasionally.
Serve hot.
