Instructions
Preheat oven to 325°F (160°C). Grease a 9x13 inch baking dish.
In a saucepan, combine Heavy Cream, Whole Milk, Garlic, and Bay Leaf. Bring to a simmer over medium heat. Reduce heat to low and simmer for 15 minutes to infuse the cream.
Remove from heat and strain the cream mixture through a fine-mesh sieve, discarding the garlic and bay leaf. Stir in Salt, White Pepper, and Black Truffle Oil.
Layer Potatoes in the prepared baking dish, overlapping slightly. Pour the infused cream mixture over the Potatoes, ensuring they are fully submerged.
Cover the baking dish with aluminum foil and bake for 60 minutes.
Remove the foil and sprinkle Comté Cheese evenly over the top. Bake for another 20-30 minutes, or until Potatoes are tender and the top is golden brown and bubbly.
Let rest for 10 minutes before garnishing with Fresh Thyme and serving.
