Instructions
  1. Wash potato peels thoroughly. Ensure all eyes and blemishes are removed.
  2. Heat Olive Oil in a large pot over medium heat. Add Onion and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more, until fragrant.
  4. Add Potato Peels and Vegetable Broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until peels are tender.
  5. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth. Be cautious when blending hot liquids.
  6. Return the soup to the pot. Season with Salt, Black Pepper, and Dried Thyme. Adjust seasoning to taste.
  7. Serve hot, garnished with Sour Cream and Chives.
