Instructions
Preheat oven to 400°F (200°C). Scrub potatoes and pierce several times with a fork. Bake for 45-60 minutes, or until tender.
Let potatoes cool slightly, then cut in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato attached to the skin. Reserve the potato flesh for another use.
In a large skillet, cook Bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
Add Onion and Bell Pepper to the skillet and cook until softened, about 5-7 minutes.
Add Potato Skins to the skillet and cook for 5-7 minutes, flipping occasionally, until crispy.
Sprinkle with Garlic Powder, Paprika, Black Pepper, and Salt. Stir to combine.
Crumble the cooked Bacon over the Potato Skins. Serve immediately.
